Shrimp and Humus Wrap
First off, thanks for the feedback on the blog’s new look! I really appreciate it! I’m still open for more feedback if you have anything to say about it of course I will be tweaking a few small things here and there (most likely not too noticeable).
Jumping right into breakfast…I went as long as I could without an egg n jelly sandwich, and this morning it was time.
Is it just me or does everyone
cry, cringe, cover their eyes or change the channel when the Paranormal Activity previews come on TV? Just me? Okay.
I am a huge ginormous wuss and do not ever watch anything scary what-so-ever because I wouldnt sleep for a week (or maybe ever again?) I dont even watch crime shows when Torrance is out of town. Point being, I was having a good ol time last night watching Carrie and the girls (Sex & The City) and then all of a sudden one of those damn previews came on and I’m always taken off guard and have to hurry to change the channel.
Fitness class was good last night. I was a little sore from the last two days and had to kind of force myself to go since there is no class Thursday or Friday. It was one of those times I just went through the motions… well in my mind… I would have just gone through the motions but the trainer is so on top of it he saw my evil plan and pushed me to work harder the whole time. Of course I am thankful for that.
And look at these tortillas I found!
EXTREME right? Though you probably think that is why I bought them (because Im so extreme…) it really is not. Those were the only wheat tortillas left on the shelf at the store. And I have to say, I will definitely be getting them again because they are delish! I like that they are really soft and spongy more resembling a wrap, rather than stiff like I find a lot of other wheat tortillas to be..
So in effort to use those babies; I have a really basic, easy, and quick recipe for you that is perfect for lunch or dinner!
The nice thing about this recipe is it can be done pretty much any way you want (with any type of meat or veggies you prefer)! I will share the way I did mine for dinner last night. They were delicious, filling, and flavorful.
Shrimp & humus Wraps
Yield – 2 wraps
Total Prep & Cook time: 15 min
- 2 tortillas of choice
- 8 large shrimp
- 1/2 cup shredded cheese of choice (I use a lowfat mexican blend)
- olive oil
- garlic powder
- black pepper
- humus of choice (I use garlic)
- diced tomato
- In a small pan over medium heat, warm olive oil in small pan
- add shrimp to heated pan and sprinkle with garlic powder and black pepper. Cook for about 2 minutes and then flip shrimp and cook another 2 minutes or until done through (shrimp will be firm, orange, and curled). Remove from heat and set to side.
- Over medium heat, melt butter/margarine/or spread of choice in a medium or large pan. Once well heated add tortilla. Add shrimp to tortilla and sprinkle cheese. Heat for about a minute or until tortilla is semi-fried and cheese is melting.
- Remove tortilla from pan with large spatula. Repeat with second tortilla. Spread on humus, add veggies, and enjoy!
