Twice Baked Potatoes & Foodie Penpal Reveal
It is seriously so nice outside that I considered playing hooky from work this morning! I wish!
I decided to skip out on training last night to have dinner with Torrance instead…we had kind of had a mellow dinner since neither of us were really that hungry. So salad and twice baked potatoes it was!
It has been forever since I made twice baked potatoes – but love them!
For my twice baked potatoes I typically keep it pretty simple. I dont really know what qualifies a potato to be “twice baked” but this may be a mock version, either way, it is frickin’ delicious.
I buy the microwavable baked potatoes (that are in plastic, by the other potatoes in the produce section) because they are way faster. I popped 2 of them in the microwave (7 minutes per potato) and then when done cut them in half and scrape out the middles into a bowl.
I mix in some shredded cheddar cheese, a little Greek yogurt (for creaminess) and salt and pepper and mash it up really good.
Then I placed the 4 halves on a cookie sheet and sprinkled some more cheddar cheese and then turkey bacon bits on top and put in a 450 degree F oven for about 6 minutes so the cheese melts and the bacon bits get crispy.

This was my first month participating and I must say, it was pretty fun –I think I had just as much fun picking stuff out to send as I did when I received my box (it was like Christmas!)
Since both the person I sent a box to and received a box from are not bloggers, I will be sharing both here.
First, the box I received from Miss Peggi in Texas:
She sent me so much amazing stuff and even included dog treats for Kona, so Kona is now in love. She loves her almost as much as she loves Willow Smith
In the box was:
- 4 different types of bars
- banana chips
- sugar free gummy bears
- Hershey’s Dark bar
- Flatout sandwich wraps
- salad seasoning (which I used on bread per her suggestion – SO GOOD!)
- corn muffin mix
- and Texas and boot shaped pretzels which were adorable!
Also, she included a few recipes on cards for me which was just awesome! I cant wait to try them, especially the veggie lasagna! Yum.
Can you guess what I ate up first? The sugar-free gummy bears duh. Gummy bears are my favorite candy. She was absolutely right that they don’t even taste sugar-free, at all! I must find some of these.
Huge success! She did an amazing job picking things out for me and most of the bars were new-to-me

Cous cous - because most people havent tried it and it is delish!
mint water – so refreshing!
humus mix – just add a few ingredients
Vanilla cupcake goldfish
S’mores Luna bar – because they are my fav
Justin nut butter samples
a mini colander/strainer – perfect for rinsing fruits and veggies!
It was weirdly a little harder than I thought it would be to pick stuff out to go in the box to send! But I actually had a lot of fun putting it all together. I tried to include some things arent the regular, and apparently I did good because after she got the box she let me know that most of the stuff she had never tried which was part of my goal!
For my “something written” I did a few [colorful] index cards with some notes and ideas on how to use/serve some of the items!

I’ve been successfully drinking a ton of water daily and almost worked my way up to my goal of 120oz per day.
